HILARY’S -SPELT FLOUR GOATS CHEESE LAVENDER PANCAKES

I have to thank the wonderful Hilary Doyle for this recipe, which she concocted whilst on our road trip in Prince Edward County, a very picturesque part of Ontario Canada. Whilst staying in a house in Picton, (that gifted me a bat in my bedroom!!!) Hilary against all kitchen odds in a terribly laid out kitchen, no work surfaces and a sink half the size of the room, whipped up these healthy yet delicious pancakes.

You also can’t help but feel smug when most of the ingredients purchased were from surrounding purveyors in Prince Edward County. The Lavender Goat’s cheese we purchased from a farm called Fifth Town Diary, they are producing some very different and inspiring cheeses. They have an amazing back story and worth reading. I appreciate that not everyone likes the flavour of Lavender, so if you don’t have the luxury of purchasing such cheese, I would just substitute for a soft goats cheese, but mild in tang. You can substitute regular flour for spelt flour. If you also wish to add some vanilla essence, do so with caution as it can be overly sweet. This recipe will generate around 12 large pancakes, so halve if you don’t require as many. 

INGREDIENTS

  • 2 cups of spelt flour
  • 3/4 cup vanilla fat free yogurt
  • 1/4 plain yogurt
  • 1 cup almond milk  add extra for consistency
  • 2 tbsp raw sugar
  • 4 tbsp goats cheese lavender
  • 1 Meyer lemon, juiced
  • 2 tsp baking soda
  • 2 whipped eggs
  • Small handfull of Fresh Blueberries
  • Small handful of fresh Raspberries

METHOD

  • Place all the ingredients in a bowl except for the blueberries and raspberries.
  • Make sure any lumps are whisked out.
  • Place a heavy bottomed sauce pan over a medium heat and add a touch of coconut oil or butter. You will need to do this each round of pancakes.
  • Place around 2-3 tbsp for the pancakes batter and once they are browned and puffy on one side, flip over and scatter the berries into the pancakes each time.
  • Serve immediately with cream, yogurt or with fresh fruit.
